Caramelized Peaches & Burrata Crostinis

Ingredients:

Olive oil
1 French baguette or crusty Italian bread, sliced into 1” pieces
1 ball of fresh burrata
2 local peaches, diced
1 teaspoon butter
1 teaspoon local honey
1 tablespoon brown sugar
1 teaspoon cinnamon
Balsamic glaze
6–7 large farm fresh basil leaves, cut into ribbons
Salt to taste

Prepare the crostini:
Drizzle some olive oil on the slices of bread and sprinkle some salt
Toast the bread for 1-2 minutes until golden but not browned.

Prepare the caramelized peaches:
Begin by making the caramelized peaches. Heat a skillet over medium heat. Add the butter. Once melted, add the peaches, brown sugar, honey, cinnamon, and a pinch of salt. Sauté for 4-5 minutes, stirring frequently, until peaches have begun to break down and become caramelized. Set aside.

Assemble:  
Spoon a slice of burrata onto each slice of bread and gently flatten with a spoon.
Top each slice of bread with a spoonful of caramelized peaches.
Drizzle with balsamic glaze and sprinkle basil on top.
Add a sprinkle of salt. ENJOY!
